Yield: 2 adults and 2 kids
Preparation time: 10 minutes
Total time: 30 minutes
Ingredients:
1 pound boneless,skinless chicken breasts
1 c. all-purpose flour
2 large egg whites - lighlty beaten
3/4 c. panko - (japenese bread crumbs)
3/4 c. flaked - sweetened coconut
1 t. garlic powder
3/4 t. salt
1/2 t curry powder - (opt.)
1/4 t. grd. red pepper
3/4 c. vegetable oil - (for frying)
Putting it together:
1. Cut chicken into large strips, about six.
2. Combine egg whites in a small bowl and add next six ingredients.
3. Toss the chicken and the flour in a bowl to coat.
4. Heat oil in a straight sided saute' pan over medium high heat.
5. Working with one strip @ a time. dip into egg mixture and dredge into panko and coconut mixture. Repeat process with the remaining strips.
6. Place chicken strips carefully in the oil-do not crowd pan. fry until golden brown on the outside and done but juicy on the inside. About 5-7 minutes each side. Turn down the heat if they are browning too quickly.
Serve immediately.
Great with pineapple or mango chutney on the side!
Kids may like to dip in ketchup.
