Lemonade/Ginger Ice

Note: these can also be made into pops, using ice-cube trays and toothpicks
2 c. boiling water
3 slices fresh, peeled ginger
3/4 c. sugar
3/4c. Fresh lemon juice-about 4 lemons
1 c. ice water

*Combine 2 c. boiling water and ginger in a large bowl and steep for 5 minutes. Discard ginger
Steeping means let the ginger pieces sit in the hot water, this lets the flavor of the ginger get into the water w/ out using the actual ginger pieces in the Ice. It makes for a much gentler flavor.

* Add the sugar to ginger water, stir until the sugar completely dissolves.

* Cool completely
* Stir in the juice and 1 cup of ice water.
* Freeze for about 1 hour.

Substitutions

1. Lavender sprigs for the ginger (leave the lavender flowers in the mixture-very pretty!)
2. Peach juice for lemon juice-3/4 c. use a good brand like Santa Cruz peach nectar.
3. Fresh orange juice, about 4 oranges worth. Omit the ginger and add fresh thyme sprigs about 5.
*Use the same method when substituting the ingredients.
