Ingredients:
2 T. olive oil
1 1/5 lbs. ground turkey
2 cloves garlic, minced
1bunch scallions ( green onions) - chopped white and 3/4 of green.
1 T. ginger, grated
2 T. chopped cilantro
2 t. chile flake
2 t. sesame oil
1 t. low-sodium soy sauce
1 head iceberg lettuce - leaves separated, kept chilled.
Putting it together:
Heat the olive oil and sesame oil in a saute' pan. Brown the ground turkey until cooked thoroughly. Add the garlic, scallions, ginger and chile flake.Cook about 2 more minutes. Remove from the heat and add the cilantro and soy sauce. Add salt to taste if needed, but be light-handed. The salt from the soy will come through as it cools more.
Serve the turkey inside a lettuce leaf, like a burrito.
